Egg and Avocado Bake

  • 4 Large Avocados

    8 Large Eggs

    2 Tbsp Chives

    2 tsp Paprika

    Salt and Pepper to tast

Directions:

Cut all off the avocados lengthwise and remove the pit.  Once the avocados are cut scoop out about 1-2 more tablespoons of avocado to enlarge the area where the pit was.  Place all of the avocados on a large sheet pan with the skin down.  Then take one egg and crack it and place the contents of the egg inside the avocado where the pit had been. Repeat this for each ½ avocado.  Season the avocados with salt and pepper.  Place in the oven and cook for 15-18 minutes until the egg white is set.  Once cooked remove from the oven and garnish with chives and paprika.

I would save the extra avocado for a salad, to eat in the morning on eggs, for guacamole or just to eat as a snack.  If you don’t want it to turn black squeeze lemon or lime juice on top.
