Green Beans and Chorizo

  • 4 cups fresh green beans, stem removed and broken in half

    ½ White Onion, Chopped

    2 Links Chorizo

    Salt and pepper to taste


In a large skillet remove the casing from the chorizo and place in skillet.  Cook chorizo on medium heat until thoroughly browned and remove from skillet leaving oil in pan.  In the same pan place the onions and fry them in the oil until soft and slightly browned, about 2-3 minutes, then add the fresh green beans and cook for another 3-5 minutes until the green beans are softer and a bright green color.  They should still retain a crunch when eaten.  Remove from heat and combine with the chorizo, salt and pepper to taste and serve.
