Egg Muffins

  • 12 Large Eggs

    8 oz Feta Cheese (or any cheese of your choice)

    1 Cup Chopped Spinach

    1 Cup Cherry Tomatoes, Halved

    2 tsp salt

    1 tsp pepper

    2 tbsp Fresh Basil, Chopped


You will need one 12 muffin tin.

Preheat Oven to 350 F.

In a large bowl whisk eggs, spinach, tomato, salt, pepper and basil.  Then add cheese and mix till well combined.

Prepare muffin tin by spraying with non-stick cooking spray (or you can grease them with butter).  Then fill each muffin tin with the mixture until about ½ filled.  Bake for 15-20 minutes until muffins set.  Remove from oven and allow to cool.  Muffins can be stored in containers in the refrigerator and eaten as an easy breakfast.
