Easy Calabasas
4 Medium Sized Yellow Squash, sliced (you can use zucchini and you can use both for this recipe)
2 tbsp butter
½ Medium White Onion
1 Cup Mozzarela Cheese, shredded
2 Medium tomatoes, Cut in half, then sliced
Salt and Pepper to Taste
4 Roasted Green Chile, Optional
Directions:
In a large skillet add the butter and cook on medium high heat until melted, add the onion and cook until softened, then add the tomato and the squash and cook until soft (about 2-3 minutes). You do not need to cook the squash and tomato for too long as they can get very mushy. Once the squash and tomato are softened remove from heat and add salt and pepper to taste. You can add the green chile as this point as well. Then add the cheese and cover the skillet with its lid until the cheese is melted and serve.
